Happy Birthday to our firstborn child Peanut!

Another year has passed! How FAST! You are quickly growing and getting oh-so cheeky and smart! We are so thankful for another year for you and happily looking forward to what this year will bring to you! I still remember the first time I saw you and held you in my arms, how little you seemed. You aren't so little anymore! Thank you for giving us the privilege of being your parents! Your siblings are very happy to have you as their older sister too! Happy 5th birthday my big girl, we love you so!

Crockpot Cranberry Chicken

Made this on a whim and it wasn't bad at all! In fact, husband loved it and said it was a keeper! Kids too!
Serves 6.

1 pound chicken breasts, diced
1 can whole cranberries
1/4 cup sugar
1/2 tsp black pepper
1 envelope onion dip mix
1 onion, chopped
1 tsp minced garlic
1 tbsp soy sauce

Spray crockpot with nonstick spray. Combine cranberries, sugar, black pepper, half of the onion dip mix, onion, garlic and soy sauce. Mix well together.

In a bowl, mix together the diced chicken and the rest of the onion dip mix. Make sure to coat chicken evenly. Place chicken in the crockpot and give a final stir so everything would be incorporated. Set crockpot on low for 6 hours or high for 4 hours.

And done! Only 4 points per serving! I like to serve it with rice. Enjoy!

Quick Pregnancy Pics

Here I am at 13 weeks (I am 14 weeks and some change now). Still haven't gained weight due to my constant nausea...


And here is the little bubba residing in that little baby bump.


We are super excited! We find out the gender in a few weeks! Will update!

Crockpot Mexican Style Chicken with Beans

This is easy to throw together and is delicious and healthy. Our kids ate it all up and my husband loved it. Serve with rice and veggies of your choice on the side. Serves 6.

1 pound chicken breasts, sliced
1 can beans of your choice, drained (I used red beans)
1 can tomatoes with green chiles
1 can sweet corn, drained (or 1 1/2 cups frozen)
1 tsp chili powder

Spray crock with nonstick spray. Add the beans, tomatoes and sweet corn, mixing everything together. In a bowl, sprinkle the chicken with the chili powder and coat well. Add the chicken into the crock, and mix everything well together. Set on low for 8 hours or high for 4 hours.

Just done!

Serve! It's very tasty and good for you. Only 5 points per serving! Dig in!

Banana French Toast

This is one of my family's favorite breakfasts, hands down! Nothing like this meal served with bacon and fried eggs on the side on a Saturday morning! Easy to make too! serves 6.

12 slices of bread, your choice
4 eggs
1 cup milk
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 cup sugar
1 tsp vanilla
1/4 cup butter
Your choice of syrup

In a mixing bowl, combine the eggs, milk, cinnamon, nutmeg, sugar and vanilla. Whisk well till eggs are well blended with the other ingredients. Set aside.

In a pan, melt little bits of the butter till melted and just coating the bottom. Heat on high. Dip one slice of bread into the milk mixture and lay into the pan. Repeat with however many slices of bread will fit. Turn heat down a little bit, to medium high.


Flip onto the other side when bottom is lightly golden. Place onto a plate. Before you cook a new batch of bread, melt a little bit of the butter on the bottom of the pan. Repeat till all the bread is cooked.


Top with banana slices and serve with 2 tbsps of your choice of syrup. Only 8 points per serving! Heaven!



Egg Salad Sandwich

This is a simple sandwich I make for a lunch, and it is one of my favorites. I love having it with sweet gherkin pickles! Serves 6.

6 hard boiled eggs, shelled and sliced
1 cup mayonnaise
1/2 tsp paprika
1 tsp curry powder
1/4 tsp black pepper
1/4 tsp celery salt
1/2 cup french fried onions
12 slices of bread

In a bowl, combine the mayonnaise, paprika, curry powder, black pepper, celery salt and french fried onions. Mix well. Throw in your sliced eggs and mash well into the mayonnaise mixture till it breaks up some. It should look like this:


Then simply spoon onto a slice of bread and spread evenly. Serve with the side of your choice. About 11 points per sandwich. It's delicious!




Been A While! Family Update.

2013! Happy New Year! I haven't updated my blog in a month! Sorry folks, we have been busy.

We moved from Del City to Midwest City. It isn't as far as it sounds, it's really only a few blocks away! But as you all know, moving is a lot of work and we tried to settle in.

Kids are doing great! Growing, growing, growing. It's all they do. That, and make messes of course! LOL!  But all in all they are doing quite well.


Baby #4 is doing splendidly too! Baby is growing as he/she should be, measuring now at just over 14 weeks, right on target! My nausea isn't going away either. I have a feeling this is going to go on till I give birth. Honestly I am still on the fence on whether or not I should VBAC, or maybe just schedule a repeat c-section. I am leaning towards repeat c-section, but I tend to flip flop a lot on that. Only time will tell. I got till July to decide! Of course I will do whatever will be best for my baby and my body, and what the doctor recommends.
