Salmon Pie

This is good and easy. An alternative to Salmon Patties. Makes 8 slices.

2 eggs, beaten
1 tsp lemon juice
1 teaspoon parsley
1 tsp black pepper
1/2 cup breadcrumbs, plain or seasoned
1/2 cup fat free milk with a tsp of Splenda (or sugar!)
1/2 onion, chopped
1/2 tsp sage
3 cans boneless salmon (I use good old Chicken of the Sea brand!)

Preheat oven to 350F.

You know, you just mix everything up together till it's nice and blended. Spray a 9-inch pie pan with some nonstick spray (or brush with oil) and bake for about 45 minutes. And that is it!

Told you it was easy. About 3 points a slice.

Serve with whatever sides you want. I served it with some baked sweet potatoes and succotash. I should post my succotash recipe too, come to think of it.
