We love this. Yes, even my kids. Serves 4.

1 cup corn kernels
1 cup lima beans
1 cup tomatoes
4 slices turkey bacon
1/2 onion, chopped
salt and pepper to taste

Chop up your bacon and fry in a pan coated with nonstick spray. I use turkey bacon, but you can use regular bacon if that's what you prefer. Add your onions to the pan and fry up along with the bacon for a couple minutes.

Now add your corn and lima beans. Fresh, Frozen or Canned. Of course fresh gives the best taste, but yeah, whatever is handier for you. Add enough water to the bottom of the pan just to cover, about 1/2 cup or so. Bring to a boil and simmer for about 10 minutes. Season with salt and pepper to taste just before serving - or don't season at all!

6 points a cup, ok?

It's all good.
